Y’all, this Shrimp Scampi (15 Minute Dinner) recipe right here is what weeknight dreams are made of. It’s fast, it’s easy, and it feels downright fancy when really it comes together in about 15 minutes.

I love having a recipe in my back pocket that feels like I put in a lot of effort, but truth be told, it comes together before the kids even finish setting the table. Shrimp Scampi is creamy, buttery, zesty from fresh lemon, with just enough kick from Frank’s Hot Sauce to keep it interesting. It’s one of those dinners that makes a weeknight feel special without taking up your whole evening.

Ingredients

  • 2 tablespoons butter (plus 1 more for later)
  • 2 tablespoons olive oil
  • ½ medium onion, diced
  • 1 clove garlic, minced
  • 1 pound shrimp, thawed, peeled, and deveined
  • Juice of 2 lemons
  • ½ cup white wine (or chicken broth)
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Frank’s Hot Sauce (a few dashes… or a whole lot if you’re like me 😅)
  • 1 pound spaghetti
  • Fresh parsley, chopped, for garnish

Directions

  1. Bring a medium pot of salted water to a boil. This is for your spaghetti, but don’t add the noodles just yet—we’ll get to that in a minute.
  2. While that water’s heating up, melt 4 tablespoons of butter with 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the diced onion and garlic. Cook for 3–4 minutes until the onion is soft and smells amazing.
  4. Add your spaghetti to the boiling water now and cook it ‘til al dente.
  5. While the noodles are working, add the shrimp to the skillet. Cook for 2–3 minutes until they turn pink.
  6. Pour in the juice of two lemons and ½ cup white wine (or chicken broth). Stir in another tablespoon of butter, salt, pepper, and hot sauce. Simmer about 3 minutes to reduce slightly.
  7. Stir in the heavy cream and Parmesan. Let it cook 2–3 minutes until the sauce is creamy and thickened. Taste and adjust with more salt, pepper, or hot sauce if you’d like.
  8. Drain your spaghetti and toss it straight into the skillet. Mix well so every noodle is coated.
  9. Top with chopped parsley and serve hot.

Tips for the Best Shrimp Scampi

  • Don’t overcook the shrimp—once they’re pink, they’re done.
  • If you like it extra tangy, add another squeeze of lemon at the end.
  • Salting your pasta water is key—it’s the first chance to season the whole dish.
