Easy Beef Stroganoff

Y’all, let me tell you — this is one of those recipes that saves me time and sanity on busy weeknights. My family goes wild for this easy beef stroganoff with egg noodles, and I love it because it comes together with simple ingredients I usually already have in my kitchen.

It’s creamy, it’s comforting, and it’s on the table in about 30 minutes. That’s my kind of meal when I’m running the boys back and forth to practice or just plain worn out. This isn’t the fancy stroganoff you’ll find in some cookbook — this is my quick, southern-style version with a little Cajun kick (thank you, Slap Ya Mama).

Ingredients for Beef Stroganoff

  • 1 tablespoon olive oil
  • 1 pound ground beef (I like 80/20 for the best flavor)
  • 1 ½ medium onions, diced
  • 3 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon Cajun seasoning (I use Slap Ya Mama)
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon mustard (Dijon if you like a tangy twist)
  • 1 cup beef broth
  • ½ cup sour cream
  • 1 ½ cups egg noodles, cooked according to package directions and drained

Step-by-Step Directions

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the ground beef and cook, breaking it up as it browns. Once fully browned, drain off the excess grease so the sauce doesn’t turn oily.
  3. Stir in the diced onions, garlic, salt, pepper, and Cajun seasoning. Cook for 5–7 minutes, until the onions are soft and translucent.
  4. Sprinkle the flour over the beef mixture and stir to coat.
  5. Add Worcestershire sauce, mustard, and beef broth. Stir everything together.
  6. Bring to a simmer and let it cook for 3–4 minutes, until the sauce thickens up.
  7. Remove from the heat and stir in the sour cream. The sauce will turn silky and creamy.
  8. Let it rest for 5–10 minutes so the flavors can marry together.
  9. Gently toss in the cooked egg noodles until everything is coated.
  10. Garnish however you like — a little fresh parsley on top makes it extra pretty — and serve warm.

  • Swap egg noodles for mashed potatoes or rice if that’s what you’ve got on hand.
  • Add mushrooms if your crew likes them (mine… not so much).
