This Slow Cooker Chicken and Rice recipe is the ultimate busy-day dinner! Tender chicken, creamy gravy, Cajun seasoning, and fluffy rice come together in under 10 minutes of prep. Perfect comfort food when you’re short on time or low on energy.

This is the recipe I make when I know I’ve got a busy day ahead and I’m short on time. Honestly, it’s also the one I pull out when I’m not feeling well or I’m just running low on energy. It’s warm, creamy, and filling—the definition of comfort food.

The best part? You dump everything in the slow cooker and let it do the work for you. By dinner, your kitchen smells amazing and all that’s left to do is shred the chicken, taste the gravy, and serve it over rice.


Ingredients You’ll Need

  • 3 to 4 boneless, skinless chicken breasts
  • 1 (10.5 oz) can Cream of Chicken Soup (I suggest using unsalted to control sodium)
  • 2 (0.87 oz) envelopes of chicken gravy mix (dry)
  • 1/2 cup water or chicken broth (optional)
  • Hot steamed rice for serving
  • salt & pepper
  • Seasoning of your choice – I use this Cajun seasoning.

Step-by-Step Instructions

  1. Prep the chicken
    Place chicken in the slow cooker and season lightly with salt and pepper, if desired.
  2. Mix the gravy base
    In a bowl, whisk together the cream of chicken soup, dry gravy mix, and water (if using). Pour this mixture over the chicken.
  3. Cook low and slow
    Cover the slow cooker and cook on LOW for 6 hours.
  4. Cut cooked chicken into bite-sized pieces and season
    Before serving, break the chicken into bite-sized pieces and stir everything together.
    👉 This is when I always taste the gravy. Adjust the seasoning to your taste—but for me, this is where Cajun seasoning shines. My favorite is Slap Ya Mama Cajun Seasoning, and it takes this dish over the top!
  5. Serve
    Spoon the chicken and gravy over hot steamed rice. Comfort food at its finest.

Recipe Notes

  • Do NOT make the gravy separately—you are just using the dry mix.
  • Frozen chicken works fine—just cook on the longer side. Chicken breast must have an internal temperature of 165 degrees to be done.
  • You can toss in frozen vegetables before cooking for a complete one-pot meal.

  • A simple salad
  • A buttery roll to soak up the extra gravy
